This winter, try these healthy holiday recipes from the kitchens of our Ritchie Center staff.
Carin’s Savory Shredded Crock Pot Pork
Try this yummy shredded pork recipe from our Director of Ritchie Center Programming, Carin Orr–perfect for a chilly winter day!
3 to 5 lb pork shoulder
10 cloves garlic, minced
2 tsp ground coriander
2 tsp ground cumin
2 tsp ground oregano
1/2 pkg of dried onion soup
1/2 tsp black pepper
1 tsp ground red pepper
1/2 tsp salt
1 cup water
Put all spices in a bowl and mix. Roll pork in spices.
Place one cup of water in crock pot. Place meat with spices in crock pot.
Cover and cook on low for 8 to 10 hours or high for 4 to 5 hours.
When done, use fork and shred pork. Serve on top of cauliflower or with whole wheat rolls.
Ruth’s Chocolate Banana Bread
Try this healthy banana bread for breakfast or as a mid-morning snack. This is a favorite in the house of our Director of Marketing & Student Programs, Ruth Brown.
1 1/2 cups whole-wheat flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tbsp cinnamon
1 tbsp ground flaxseed
Pinch of sea salt
3 ripe bananas, mashed with a fork
2 egg whites
1/4 cup unsweetened applesauce
1/2 cup honey
1/4 cup safflower oil
1/3 cup chopped dark chocolate
Preheat oven to 350°F. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, flaxseed and salt.
In a large bowl, with a hand mixer, beat bananas until smooth. Add egg whites and beat until combined. Gradually mix in applesauce, honey and safflower oil.
Mix dry ingredients into banana mixture; stir in chocolate.
Mist a 9 x 5-inch loaf pan with cooking spray. Pour batter into pan and bake for 45 minutes, or until browned on top.
Brittany’s Crispy Potato Cubes
This side dish is sure to be a hit with your friends and family during any holiday meal. It is a holiday staple for our Web Services Manager, Brittany Evans.
1/3 cup flour
3/4 tsp salt
1/2 tsp dried thyme
1/2 tsp dried marjoram
1/8 tsp pepper
5 medium-sized potatoes, peeled and cut into 1-inch cubes
1/4 cup butter, melted
1 garlic clove, minced
Preheat oven to 450°F. Pour butter over a 13×9-inch baking dish. Mix in garlic evenly.
In a resealable plastic bag, combine flour, salt, thyme, marjoram and pepper. Shake to mix well.
Add potatoes to bag, and shake until potatoes are well-covered. Pour potatoes over butter and garlic on baking dish.
Cover dish and bake for 20 minutes. Uncover and stir potatoes, then bake for an additional 15-20 minutes, or under potatoes are lightly browned.
